Ingredients

  • 16 oz. fruit/peel mix
  • 4 oz. pineapple
  • 4 oz. cherries - cut up
  • 1/2 lb. raisins
  • 1/2 lb. currants
  • 1/2 lb. chopped dates
  • 1/2 lb. chopped nuts
  • 1/2 c. flour (for fruit & nuts)
  • 1 3/4 c. flour (sifted)
  • 1/2 t. baking powder
  • 1/2 t. cinnamon
  • 1/4 t. cloves
  • 1/4 t. mace
  • 1/4 t. allspice
  • 1/2 lb. butter - room temp.
  • 1/2 lb. dark brown sugar
  • 5 eggs - separated
  • 1/4 c. honey
  • 1/2 c. dark molasses
  • 1/4 c. bourbon

Instructions

Step 1
Combine fruit & nuts with 1/2 c. flour - mix well - large bowl.
Step 2
Sift 1 3/4 c. flour with baking powder, cinnamon, cloves, mace, and allspice.
Step 3
Cream butter - room temp. with dark brown sugar.
Step 4
Add egg yolks one at a time, then honey, dark molasses, and bourbon.
Step 5
Fold in flour/spice mixture, then fruit/nut mixture.
Step 6
Beat egg whites until stiff and fold in last.
