Ingredients

  • 3 c. grated carrots
  • 2 c. flour
  • 2 c. sugar
  • 2 t. baking soda
  • 2 t. cinnamon
  • 1 t. salt
  • 3/4-1 1/8 c. oil
  • 4 beaten eggs
  • 1/2-1 c. pecans or walnuts, chopped

Instructions

Step 1
Combine dry ingredients in large bowl.
Step 2
Add oil & eggs.
Step 3
Stir in carrots and nuts.
Step 4
Divide into 2 pans.
Step 5
Bake at 350° for 25-30 min.
