
Ingredients
- 3 egg whites
- 6 T. sugar
- 1 t. vanilla
- 2 1/2 C. milk
- 3 egg yolks
- 2 C. milk (used for cooking meringues)
- 1/4 C. sugar
Instructions
Step 1
Put milk in lg. skillet. Bring to simmer over low heat.
Step 2
Beat egg whites. When frothy, add sugar gradually. Beat until shiny & stiff.
Step 3
Using dessert spoon, scoop meringue islands onto barely simmering milk.
Step 4
Poach 1-2 min. on each side (if not turned over - 4 min.) until firm.
Step 5
Drain on paper towel. 10 meringues.
