Ingredients

  • 4 c. milk
  • 1 c. yellow corn meal
  • 1/2 c. dark brown sugar
  • 1/2 c. dark molasses
  • 2 eggs, slightly beaten
  • 2 T. butter or oleo, melted
  • 1 t. salt
  • 1 t. cinnamon
  • 1/4 t. ginger
  • dash nutmeg

Instructions

Step 1
Heat milk in 2 qt. casserole on 50% until scalding—just below boiling 212°—9? min.
Step 2
Stir in cornmeal. Cook on 50% 5-8 min. or until thick. Stir occasionally.
Step 3
Combine remaining ingredients in large bowl. Stir hot milk into egg mixture. Pour into 2 qt. casserole.
Step 4
Bake at 50% 13 to 16 minutes until set but still quivering on top.
