Ingredients

  • 8 chicken breasts
  • 4 cloves garlic
  • 2 t. oregano
  • 3 bay leaves
  • 1/2 c. brown sugar
  • salt & pepper
  • 1/4 c. red wine vinegar
  • 1/4 c. olive oil
  • 1/2 c. pitted prunes
  • 1/4 c. pitted green olives
  • 1/4 c. capers & some juice
  • 1/2 c. white wine

Instructions

Step 1
Put chicken in shallow dish.
Step 2
Mix together garlic, herbs, vinegar, o. oil, prunes, olives & capers.
Step 3
Pour marinade over chicken.
Step 4
Refrigerate overnight.
Step 5
Arrange chicken in roasting pan.
Step 6
Pour marinade over.
Step 7
Sprinkle brown sugar on chicken. Add salt & pepper.
