
Ingredients
- 1 1/2 lb new potatoes
- 1 lb asparagus
- 3 eggs, hard boiled
- 1 avocado
- 2 sm. red onions, finely sliced
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- fresh parsley, chopped
- 2 zucchini, thinly sliced
- 2 oz. pitted green or black olives
- 3 T. capers
- 3 T. mayonaise
- Mustard & parsley dressing (see recipe)
Instructions
Step 1
Cook potatoes in boiling salted water until tender - about 15 min.
Step 2
Cut into match bite size pieces.
