Peasant Salad

Ingredients

  • 1 1/2 lb new potatoes
  • 1 lb asparagus
  • 3 eggs, hard boiled
  • 1 avocado
  • 2 sm. red onions, finely sliced
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • fresh parsley, chopped
  • 2 zucchini, thinly sliced
  • 2 oz. pitted green or black olives
  • 3 T. capers
  • 3 T. mayonaise
  • Mustard & parsley dressing (see recipe)

Instructions

Step 1
Cook potatoes in boiling salted water until tender - about 15 min.
Step 2
Cut into match bite size pieces.
