Shrimp With Feta And Tomatoes

Ingredients

  • 3 lbs. lg. shrimp, peeled
  • 1 lemon - juice + finely grated zest
  • 1/4 C. extra virgin olive oil
  • 2 t. dried oregano
  • salt + pepper to taste
  • 1-2 heads radicchio leaves cut into small pieces
  • 2 1/2 plum tomatoes cut into bite size pieces
  • 8 oz feta cheese ~ 1" cubes
  • 1/2 C. chopped mint leaves
  • 2 T. red wine vinegar
  • 2 t. Dijon mustard
  • zest of 1 lemon
  • salt & pepper to taste
  • 3 T. extra virgin olive oil

Instructions

Step 1
Vinaigrette: Whisk vinegar, mustard, lemon zest, salt & pepper together in small bowl.
Step 2
Continue whisking while slowly adding oil until thickened.
Step 3
Set aside.
