Step 1
Bring 2" water/sea or salted fresh to rolling boil.
Step 2
Put lobsters in head first, one at a time.
Step 3
Bring water to boil again & begin timing -
Step 4
15 - 18 min. for 1 - 1 1/4 pounders (hard shells)
Step 5
18 - 20 min. for 1 1/2 pounders (hard shells)
Step 6
If soft shell, reduce heat by 3 min.
