Fish Fillets Florentine

Ingredients

  • 1 lb. fresh spinach
  • 1 1/2 lb. fillets (flounder, whiting)
  • 3 tablespoons lemon juice
  • salt and pepper to taste
  • 1/2 cup water
  • 1/2 cup milk
  • 2 tablespoons instant blending flour
  • 1 tablespoon parsley, minced
  • pinch nutmeg
  • 6 tablespoons grated Parmesan cheese

Instructions

Step 1
Wash and trim spinach and place in pan. Cover and cook 2-3 minutes. Drain well.
Step 2
Arrange fish in single layer in baking dish. Sprinkle with lemon juice, salt and pepper, and water. Cover with foil and bake at 350° for 5-7 minutes.
Step 3
Drain liquid into a saucepan and heat to a boil. Combine milk and flour and stir into liquid. Cook, stirring constantly until it thickens.
Step 4
Stir in parsley, nutmeg and season to taste.
Step 5
Arrange fish in center of a baking pan; surround with spinach.
Step 6
Pour sauce over all and sprinkle with cheese.
Step 7
Run under broiler until bubbly.
