
Ingredients
- 4 oz. Neufchatel cheese
- 2 oz. Goat cheese
- 1 T. chopped chives (fresh)
- 2 t. lemon juice
- 4 sheets phyllo, thawed
- Veg. cooking spray
- 4 3oz sole fillets
- chives & lemon slices for garnish
Instructions
Step 1
Combine 1st 4 ingredients in sm. Cuisinart.
Step 2
Place 1 sheet of phyllo on damp towel. Coat lightly with cooking spray.
Step 3
Spread 1/4 cheese mixture on bottom 2" of phyllo.
Step 4
Place 1 fillet above cheese mixture. Fold chive covered phyllo over fish. Fold lengthwise edges over fish & cheese. Roll up jellyroll fashion.
