Poached Salmon

Ingredients

  • 3 C. H2O
  • 1/2 c. rice wine vinegar
  • 1 leek - halved
  • 1 carrot - halved
  • 1 orange - juice & pared rind
  • 5 peppercorns
  • 1 bay leaf
  • 3 lbs salmon (skin on), cut into 6 pieces

Instructions

Step 1
In pot large enough to hold salmon in 1 layer, add all ingredients exc. salmon.
Step 2
Bring to boil, then simmer 10 min.
Step 3
Remove leek & carrot.
Step 4
Add salmon. Turn heat to medium-low.
