
Ingredients
- 3 lbs. lg. shrimp, peeled
- 1 lemon - juice + finely grated zest
- 1/4 c. extra virgin olive oil
- 2 t. dried oregano
- salt & pepper to taste
- 1-2 heads radicchio leaves cut into small pieces
- 2 lb. plum tomatoes cut into bite size pieces
- 8 oz feta cheese → 1" cubes
- 1/2 c. chopped mint leaves
- 2 T. red wine vinegar
- 2 t. Dijon mustard
- zest of 1 lemon
- salt & pepper to taste (vinaigrette)
- 3 T. extra virgin olive oil (vinaigrette)
Instructions
Step 1
Whisk vinegar, mustard, lemon zest, salt & pepper together in small bowl.
Step 2
Continue whisking while slowly adding oil until thickened.
Step 3
Set aside.
