
Ingredients
- 2 lbs. brown mushrooms
- 3 chopped shallots
- 1/4 lb. butter
- 1 pt. good chicken stock
- 1/4 t. tarragon
- 3 T. flour
- 1 pt. thin cream
- 2 T. sherry
Instructions
Step 1
Cook 2 lbs. brown mushrooms and 3 chopped shallots in 1/4 lb. butter 10 min.
Step 2
Add 1 pt. good chicken stock, 1/4 t. tarragon.
Step 3
Simmer 20 min.
Step 4
Put in blender with 3 T. flour, mix well.
Step 5
Add 1 pt. thin cream.
Step 6
Cook in double boiler until thick & smooth.
Step 7
Add salt to taste & 2 T. sherry.
