Butternut Squash And Apple Soup

Ingredients

  • 2 T. unsalted butter
  • 2 T. good olive oil
  • 4 c. chopped yellow onions
  • 2 T. mild curry powder
  • 5 lbs. butternut squash
  • 1 1/2 lbs. sweet apples (ie. Macintosh)
  • 2 t. Kosher salt
  • 1/2 t. freshly ground pepper
  • 2 c. good apple juice or cider

Instructions

Step 1
Warm the butter & olive oil in large stock pot over low heat.
Step 2
Add the onions & curry powder & cook, uncovered, 15-20 min, until onions are tender.
Step 3
Stir occasionally, scraping the bottom of the pot.
