
Ingredients
- 2 T. unsalted butter
- 2 T. good olive oil
- 4 c. chopped yellow onions
- 2 T. mild curry powder
- 5 lbs. butternut squash
- 1 1/2 lbs. sweet apples (ie. Macintosh)
- 2 t. Kosher salt
- 1/2 t. freshly ground pepper
- 2 c. good apple juice or cider
Instructions
Step 1
Warm the butter & olive oil in large stock pot over low heat.
Step 2
Add the onions & curry powder & cook, uncovered, 15-20 min, until onions are tender.
Step 3
Stir occasionally, scraping the bottom of the pot.
