Acorn Or Butternut Squash Soup

Ingredients

  • 3 lbs. squash (2 med. acorn)
  • 2 C. chicken broth
  • 2 T. chopped parsley
  • 1/2 t. salt
  • 1/4 t. white pepper (go easy)
  • milk as needed to thin
  • 1/4 t. cinnamon
  • 3 T. maple sugar or 2 T. bourbon & 1 T. brown sugar maple sugar or bourbon & brown sugar
  • pinch nutmeg
  • pinch allspice

Instructions

Step 1
Put squash, broth, parsley, salt & pepper in stock pot and bring to a boil. Cook 10 min. Process in Cuisinart.
Step 2
Return to stock pot. Add spices, maple syrup, & milk as needed. Bring to boil.
