  • 1 T. butter or margerine
  • 1 lg. onion, chopped
  • 3 C. chicken broth (much less)
  • 1 1/2 lbs. fresh tomatoes, peeled, seeded, & chopped
  • 4 C. canned tomato puree
  • 1 lg. stalk celery, chopped
  • 4-6 sprigs of parsley
  • 1 T. sugar
  • 1 tsp. dried basil (or 2 tsp. fresh)
  • 1 tsp. dried marjoram
  • salt, freshly ground pepper
