- 1 T. butter or margerine
- 1 lg. onion, chopped
- 3 C. chicken broth (much less)
- 1 1/2 lbs. fresh tomatoes, peeled, seeded, & chopped
- 4 C. canned tomato puree
- 1 lg. stalk celery, chopped
- 4-6 sprigs of parsley
- 1 T. sugar
- 1 tsp. dried basil (or 2 tsp. fresh)
- 1 tsp. dried marjoram
- salt, freshly ground pepper
