Ginger Carrot Soup

Ingredients

  • 1 T. (teaspoon) minced ginger root
  • 2 cloves garlic, minced
  • 1/2 c. chopped onion
  • 3 cans chicken broth
  • 2 T. margerine
  • 5 c. (2 lbs.) sliced carrots
  • 1-2 T. (1 lime) lime juice
  • yogurt (non-fat) for garnish

Instructions

Step 1
In large casserole, sauté ginger, garlic, and onion in margerine until tender.
Step 2
Stir in carrots.
Step 3
Add chicken broth.
