Tomatoes A La Greque

Ingredients

  • 1/2 c. rice
  • 6 tomatoes
  • 2 t. salt
  • 6 T. olive oil
  • 1/2 c. chopped onion
  • 3/4 c. tom. purée
  • 1/2 c. chopped parsley
  • 1 1/2 T. dried mint
  • 2 t. finely chopped garlic
  • 1/4 t. oregano
  • 1/2 c. pine nuts

Instructions

Step 1
Cook rice in 1 c. boiling H2O uncovered 8 min. (or until al dente). Drain & set aside.
Step 2
Cut tops off tomatoes & hollow out with a spoon. Chop inner pulp & set aside.
Step 3
Sprinkle inside of tomatoes with 1 t. salt & drain.
